We'll see how this turns out. I'm experimenting with some saurkraut seasonings.




Crockpot pork and saurkraut

2lbs saurkraut
1 cup unsweetened applesauce
1 tbsp apple cider vinegar
1 tbsp bourbon whiskey
1/3 cup (approx) packed brown sugar
1/2 tsp dried yellow mustard
1/8 tsp cayenne pepper

2lb pork loin or pork roast
pinch salt, pepper, garlic powder
vegetable oil for searing

Add saurkraut, applesauce, cider vinegar, whiskey, brown sugar, mustard and cayenne to crockpot. Stir to combine.

Heat oil in skillet on high heat. Season pork loin with salt, pepper and garlic powder. Sear on each side for a few seconds to get some browning. Add loin/roast to crockpot. Cook until done (? 3 hours? maybe 4, dunno, I just put it in) and serve with mashed potatoes.

do you think i could cook this in a skillet and have it done a little faster?

i have a small tenderloin - I browned it in a skillet and then added half a 2lb bag of saurkraut, maybe half a cup of applesauce, 1/4 cup chopped onions and your other ingredients (though very light on the brown sugar). I covered the skillet and set it to low - it's been cooking maybe an hour. When Jason gets home I'll slice the pork into medallions.

I also made mashed potatoes, stovetop stuffing (with onions and apples), a bit of store bought pork gravy, and some steamed veggies...
