Quick Chicken Curry

Quick Chicken Curry -- quick to prepare anyway, but still has to simmer for a while
Ingredients:
3 tsp curry powder
2 tsp chili powder
1 tsp garam masala
1 tsp ground coriander
1 tsp cinnamon
1/2 tsp ground cayenne pepper
3 tbsp oil
1 onion, chopped
2 cloves garlic, minced
1 lb chicken breast, cubed
1 8oz package fat free sour cream or fat free plain yogurt
1 6oz can tomato paste
1 (6oz to 9oz) bag fresh spinach, coarsely chopped
1 15oz can garbanzo beans, drained
1 c water (approx)
2tbsp chopped fresh cilantro leaves (or 2tsp dried)
1 tomato, chopped
Directions:
1) Make a paste of the spices with a little bit of water. Also, in a separate bowl, whisk together the sour cream and tomato paste and set aside.
2) Heat oil in skillet or dutch oven and saute onions and garlic for 5 minutes on medium heat. Add spice mixture and sautee for 2 minutes. Add cubed chicken and sautee for 10 minutes more.
3) Add water, sour cream mixture, spinach, and garbanzo beans. Cover and simmer for 1 hour, stirring occasionally.
4) serve over rice, topped with tomatoes and cilantro.
Sadly tonight I was experimenting and I sort of followed part of a recipe from allrecipes that called for 2 tsp of cayenne. Here's a note, unless you're making a GIANT pot of chili, never put 2tsp of cayenne into anything. I think 1/2 tsp will be fine in this recipe. My taste buds will eventually recover, though it may require ice cream.

Date: 2005-07-28 01:37 pm (UTC)LOL! Do you suppose the recipe writer didn't know the difference between cayenne and chili powder? In any case, I'm glad that someone besides me has finally acknowledged the amazing medicinal powers of ice cream!
In any case, the recipe you put up looks fantastic - I can't wait to try it out.

But you have to be careful though because the seeds themselves pack quite a punch when you eat them -- cardamom overload. I'm not sure how to fix that-- perhaps I should grind them up first and that would work. Anyway, the garam masala has cardamom in it, so you can just add a little bit more -- maybe 1 1/2 tsp.
