Pineapple Chicken Skewers
You will need barbecue skewers and a grill
for the skewers:
1 lb boneless skinless chicken breast (about 2 breast halfs), cut into chunks
1 fresh pineapple, peeled, cored and sliced into chunks
Veggies for skewers (1 red pepper, 1 green pepper, 1/2 sweet or red onion)
for the marinade:
1 8-oz can crushed pineapple in juice
3 green onions, finely chopped
1 tbsp grated ginger root
3 cloves garlic, crushed
3 tbsp (approx) honey
red pepper rice wine vinegar
soy sauce
Mix the first four marinade ingredients together. Stir in honey to taste (I think I used about 3 tbsp, possibly more). Add equal parts rice wine vinegar and soy sauce until you have a good liquid consistency (maybe 1/4 c each, perhaps less). Put the chicken pieces in a ziplock bag and pour the marinade over them. Marinate for at least two hours (the longer the better -- overnight is good). You can also choose to marinate the veggies too. But not in the same bag as the meat.
Put chicken, pineapple and veggies onto skewers and grill on high for 10-15 minutes until the veggies are cooked and the chicken is done.
