Dessert tonight!

we grilled steaks and I figured I'd do a grilled dessert so I did dessert kebabs:
makes 2 servings
2 bananas cut into about 7-8 chunks apiece
12-14 large chunks of fresh pineapple
4 skewers
approx 4oz dark rum
approx 2 tbsp brown sugar
approx 2 tbsp honey
approx 1/8 tsp cinnamon
slight dash of ground ginger
slight dash of ground cayenne pepper (optional)
4oz mascarpone cheese
honey & brown sugar to taste
Skewer the banana and pineapple chunks alternating along each skewer, evenly distributing them among the available hardware. Mix together rum, brown sugar, honey, cinnamon, ginger and cayenne in a bowl until blended. May be slightly syrupy. Place skewers in a plastic container and brush with most of the syrup mixture, coating all sides. Leave a small amount (maybe 1 tsp?) in the bowl. Add mascarpone cheese to the bowl and mix until smooth. Add honey and brown sugar to the cheese to taste and again mix until smooth. I like it not too sweet so it has a fresh cream taste to it. Set mixture aside in the fridge.
Let the skewers soak up the syrup for a little while, perhaps 1/2 hour to an hour. Then heat up the grill and grill skewers on medium high so they get good grill marks on them, basting with any of the syrup left over from the container. Take off the heat and serve immediately using the mascarpone as a topping. Yum!
