Ingredients:
--About 2 cups leftover sauce from Quick Chicken Curry (I made this using whole chicken thighs so the sauce was basically garbanzos, spinach, onions, yogurt, tomato paste and the spices)
--1 10-oz can garbanzo beans
--1 8-oz package cream cheese
--About 1 tsp Swad Mint Chutney (compliments of [livejournal.com profile] wishkey: this stuff is freakin awesome)

Add sauce and garbanzos to a food processor and blend until it's as smooth as you want. Add cream cheese in chunks and continue blending. The cream cheese may stay in clumps, this is okay. Mix in mint chutney. Put mixture into a small crockpot or on a stove on low heat to blend, warm it up and get all the cheese to melt to the right consistency. Serve warm or cold, with pita or baby carrots or chips or other good stuff.

That chutney (which is actually mint-cilantro chutney) my favoritest crack in the world. And it doesn't even remotely involve chocolate!

they do make soy cream cheese and soy soy cream at Giant Eagle. i get it for B. for those that may be grossed out, it tastes the same. i don't even buy the real stuff any more. I used the cream cheese in one of those "pretend" cheese cakes at Christmas with the cool whip. it was realy good. gussied it up with some lemon zest and vanilla.
your dip sounds tasty.
