Banana bread experiment
Jan. 28th, 2007 06:07 pmI had two aging bananas and a container of yogurt that I wanted to use, so to wit:
Banana Bread
------------
2 very ripe bananas, mashed
1 c non-fat plain yogurt
2/3 c white sugar
2 c flour
3 tbsp butter, softened
1 tsp baking soda
1 tsp (approx) cinnamon/pumpkin pie spice
1 capful vanilla
1 egg
Soften butter. Cream together butter and sugar with a whisk, add egg. whisk together until smooth. Add bananas and yogurt and whisk until combined. Sift in flour+baking soda, add vanilla and spices. Pour into greased 9x5 pan. Bake on 350 about an hour, or until toothpick comes out clean.

But the recipe sounds delicious and I adore banana bread.
