Easy Spicy Pasta
-----------------

1 lb. Roma tomatoes, minced
1/3 c minced banana pepper rings
1 can minced clams (economical version) or 1/2 lb scallops (fancy version)
2 tsp minced garlic (like comes in the jar)
1 Tbsp minced basil (like comes in those jars or tubes), approx 1/4 c chopped fresh?
1/2 tsp red pepper flakes
1/2 tsp Tabasco sauce (two or three shakes of the bottle)
1 Tbsp capers
2 Tbsp extra virgin olive oil
1/3 to 1/2 pound of Angel Hair pasta (approx.)
Parmesan cheese to taste

Directions: Set water to boil for pasta. Heat olive oil med/low in a large skillet and add garlic, basil, red pepper flakes and capers. Let spices cook in oil on low for about 5 minutes, but make sure garlic doesn't burn. Add clams or scallops and Tabasco. Turn up heat, add tomatoes and banana pepper rings, simmer for 10-15 minutes until tomatoes begin to break down. While the sauce is simmering, cook pasta as directed (angel hair should be done in 5-6 minutes). Drain and rinse pasta, then toss in the skillet with the sauce. It should soak up most of the moisture. Serve topped with Parmesan cheese.

Normally I don't go for red clam sauce, but spicy sounds good. Usually people put spicy-hot on sprimp, but often the shrimp are too mild to take the heat. Clams would be better.

I'll have to try this sometime.Fresh banana pepper rings, or jarred in brine?
