1 lb chicken breast (2 large halfs or 3 small)
2 celery stalks cut small
1 green onion, minced
1 dill pickle spear, minced
2 tbsp dried cranberries, minced
1/4 tsp garlic powder (or to taste -- estimating here; I actually just put in a few sprinkles)
1/2 c mayonnaise (again eyeballed)
1 pinch kosher salt
black pepper and lemon juice to taste
1 tbsp oil
Season chicken breasts with salt, pepper and lemon juice. Heat oil in a skillet and cook chicken breasts on low for about 15 minutes or until done. Shred chicken breasts with a fork and add to a bowl. Add celery, green onion, pickle, cranberries, and garlic powder, stir until mixed. Mix in mayonnaise a bit at a time to obtain desired consistency. Chill and serve.
