1 eggplant
2 tbsp olive oil
1 tbsp nutritional yeast
1/4 c seasoned bread crumbs
1/2 tsp salt
ground black pepper
Peel and slice eggplant into thin sticks. Toss in a bowl to coat with olive oil. Sprinkle other ingredients, toss to coat, bake at 400 ~17 minutes or until desired doneness.
