1 eggplant
2 tbsp olive oil
1 tbsp nutritional yeast
1/4 c seasoned bread crumbs
1/2 tsp salt
ground black pepper

Peel and slice eggplant into thin sticks. Toss in a bowl to coat with olive oil. Sprinkle other ingredients, toss to coat, bake at 400 ~17 minutes or until desired doneness.

I used to coat eggplant sticks with flour and fry them. YUM. But this sounds way easier and less messy. Thanks!

It is way easier for sure. I've noticed that the nutritional yeast coats them very well and really adds to the crispness (it sticks better than the bread crumbs too).
