Jan. 25th, 2006 04:11 pmEasy crockpot chicken with mushroom white wine sauce
3 chicken breast halves, cubed (about 1.5 lbs or so -- I used frozen Tyson breasts but thawed them before putting them into the crockpot)
1 container fresh sliced mushrooms (about 1.5 cups)
1/2 cup carrot strings
1 medium sweet onion, diced
1 can cream of mushroom soup (I used campbell's healthy request version)
1 can cream of chicken soup (same here)
1/2 cup white wine
2 tbsp milk
1/4 tsp garlic powder
1 tsp dried parsley
1 tsp black pepper
Add everything to the crockpot and cook (3-4 hours?) until chicken is done and veggies are soft. Serve mixture over biscuits with a side of something green.
Yellow rice with spice
1 cup texmati basmati rice
1 3/4 cup water
1/2 cup frozen mixed vegetables
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp turmeric
1/4 tsp kosher salt
Pour rice, veggies and water into pot, bring to a boil. Add spices and stir once, then cover tightly with foil and reduce heat. Simmer for 15 minutes, turn off heat and let stand covered for another 5 minutes. Serve.

Date: 2006-01-25 11:57 pm (UTC)Texmati is white basmati. It's a brand I get. They are the ones in the quart-sized plastic containers with blue lids. Also they have green-lidded ones that are called Jasmati (jasmine). I always get a perfect pot when I follow their directions on the back of their packages, hence my repetition of them here. But I don't know if their methods will work the same on another brand, so I just kept it to Texmati. :)
