Easy crockpot chicken with mushroom white wine sauce

3 chicken breast halves, cubed (about 1.5 lbs or so -- I used frozen Tyson breasts but thawed them before putting them into the crockpot)
1 container fresh sliced mushrooms (about 1.5 cups)
1/2 cup carrot strings
1 medium sweet onion, diced
1 can cream of mushroom soup (I used campbell's healthy request version)
1 can cream of chicken soup (same here)
1/2 cup white wine
2 tbsp milk
1/4 tsp garlic powder
1 tsp dried parsley
1 tsp black pepper

Add everything to the crockpot and cook (3-4 hours?) until chicken is done and veggies are soft. Serve mixture over biscuits with a side of something green.




Yellow rice with spice

1 cup texmati basmati rice
1 3/4 cup water
1/2 cup frozen mixed vegetables
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp turmeric
1/4 tsp kosher salt

Pour rice, veggies and water into pot, bring to a boil. Add spices and stir once, then cover tightly with foil and reduce heat. Simmer for 15 minutes, turn off heat and let stand covered for another 5 minutes. Serve.

Did the Crockpot Manufacturers Association send you after me? If so, I think they've finally convinced me to get a crockpot, because that chicken dish sounds damn good!

Is the texmati a white or brown basmati?

The chicken is turning out well despite the fact that I put far, far too much garlic powder in [I wasnt thinking and just threw some in -- possibly closer to a tablespoon]. It tastes good [the chicken that I had in the house was already cooked -- so I'm not gonna die or anything], but the musrooms need to get mushier. I was surprised at how much liquid the carrots and the mushrooms have produced in a couple of hours.

I also used more carrots than suggested -- probably about a cup and a half.

But it smells yummilicious.

I left out the onions because I was too lazy to chop them up. *totally lazy* But the extra mushrooms and carrots are liquidy. :)

It's gonna make good lunches for the rest of the week.
