1 8oz package cream cheese, softened
4 tbsp butter, softened
1 1/2 c white sugar
2 eggs
2 c mashed bananas (about 6 small or 3 large)
1 tsp vanilla extract
1/2 tsp baking soda
1 1/2 tsp baking powder
2 1/4 c flour
1/4 c brown sugar
1 c chopped walnuts (approx -- to taste)
1 tbsp cinnamon
1/2 tbsp pumpkin pie spice
Preheat oven to 350f.
In large bowl, beat together cream cheese and butter with electric mixer until softened. Add sugar a little at a time, beating until the mixture is light and fluffy. Add eggs 1 at a time, beating mixture after each addition. Add bananas and vanilla and beat until the mixture is uniform. Then add the dry ingredients -- baking soda, baking powder and flour, and mix slowly until all are absorbed and mixture is moist. You can also give it one more run through with the electric mixer to get rid of any clumps. Stir in walnuts, brown sugar and spices.
Grease and flour two 8x4in bread pans. Pour batter evenly between the two pans. Bake 50-60 minutes, or until a toothpick inserted at the center comes out clean.
Eat with coffee for breakfast the next morning. Or if you're like me, let it sit in the refridgerator for a few hours and then lose willpower at 1am and have some then while trying to work on thesis revisions.
