Vegan mac&cheese

2 sweet potatoes
1 lb elbow noodles
2 cups Ripple chickpea milk
1/3 cup margarine
1/3 cup flour
2 tbsp nutritional yeast
dash of cayenne
dash of garlic powder
a good few cranks of black pepper
1 tsp salt
2 tsp brown mustard
Bake sweet potatoes at 375 for 45 minutes , remove skins, set aside in a bowl.
Cook the noodles and set aside.
Melt the margarine in a stockpot and then add the flour, whisking until you get a thick consistency and smooth. Add 1 cup milk and the potatoes, stir. Add the rest of the milk and the rest of the ingredients, stir, then finish it off with a hand blender to smooth it out. Mix in the elbow pasta and serve!

Date: 2017-10-30 08:56 pm (UTC)Could you use an oil instead of margarine? That stuff's not far off being plastic. I've made very successful and delicious vegan cakes using olive oil, but I've never tried making a roux with it. [googles] Aha, apparently you can - any oil or fat will work.
