Today's recipe brought to you by "Neither of us have any desire to leave the house & go grocery shopping."
Most measurements approximate.
1 cup diced onions
1 1/2 tsp minced garlic
2 Tbsp extra virgin olive oil
1/2 cup frozen corn
3/4 cup frozen green beans
2 Tbsp chopped fresh italian parley
1 cup frozen spinach
1 24 oz can peeled whole tomatoes
1 14.5 oz can red kidney beans, drained & rinsed
1 cup dry elbow pasta
salt/pepper to taste
1 tsp basil paste
1 tsp dried oregano
~6 cups chicken broth (3 cans, most of one of those bigger cartons), plus about 2 cups water
parmesan cheese
Heat olive oil in pot on medium, saute onions until translucent. Add garlic, saute 30 seconds until aromatic. Add corn, green beans, spinach, parsley, tomatoes, water, broth and spices. Bring to a boil, reduce heat and simmer for 15 minutes. Spoon out tomatoes and cut them apart with kitchen shears because you are impatient.* Simmer 10 minutes more. Add pasta and kidney beans. Simmer again 25 minutes until pasta is cooked through and tomatoes have sufficiently come apart to your liking. Serve sprinkled with parmesan cheese and more salt/pepper as you like.
Also made cornbread. Not bad for finding stuff in the pantry and freezer. :)
*I should say, if you are NOT impatient, use crushed tomatoes, or cut up the tomatoes (yes) but simmer the concoction until the tomatoes break down to the level you want, before adding the beans and pasta, and simmer then only 10 minutes or so. Otherwise you will be prone to overcooking the beans and pasta.
