So far, so good :) I did it the Alton Brown way, cooked for probably 1hr 15minutes at 250 in a water bath, and then let it sit in the oven (turned off) for another hour. They're in the fridge cooling now-- they seem to be firming up pretty well. Not that I'm going to actually *have* any, since I'm going out of town for the next four days. But D will report back on success vs. failure...
