Today's experiment



Italian sausage pasta

Ingredients

1 1/2 tbsp extra virgin olive oil
1 clove garlic, minced
1 green banana pepper, finely chopped
1/2 c spanish onions, finely chopped
2 patties (no casings) hot italian sausage (about 1/2 lb)
5 roma plum tomatoes, chopped
2 tbsp finely chopped fresh basil (about 6 leaves)
1 (9 oz) bag of fresh spinach, coarsely chopped
salt and tabasco seasoning (to taste)
1 package penne pasta

Directions: Cook pasta and set aside. Heat oil in large saucepan and add sausage, garlic, banana pepper and onion. Break sausage into bite-sized pieces as it is cooking (or you can do that before, too). Cook until sausage is mostly done and onions are translucent. Add tomatoes, cook on medium until tomatoes start to break apart and simmer (about 10 minutes). Add spinach and basil and cook covered until the spinach wilts. Stir. Add salt and tabasco to taste. Toss with pasta and serve with parmesan or romano cheese.
