pork roast



all measurements approximate

1 2 lb pork roast
1/3 large vidalia onion
3/4 cup unsweetened applesauce (1 single serve container)
~1/3 cup pineapple mango salsa
~1/3 cup wheat beer (I had hoegarten)
2 tbsp honey
salt, black pepper, garlic powder to taste
1 tbsp olive oil
2 cups wide Egg noodles

veggies (3 small fingerling potatoes, and about a cup of cauliflower. Could also use carrots)

Preheat oven to 400F. Heat a pan with oil to high.

Season the pork roast with salt, pepper, garlic powder. Sear in hot pan with oil, approx 1 minute per side to get a nice brown sear on the edge.

Slice the onion long ways into slabs/rings about 1/4 inch thick and place on the bottom of a glass baking dish (I used 8x8 with a 1.67lb roast, you could use 9x11 or whatever, depending on how much veggies you have). Place roast on onions. Cut potatoes or carrots into about 1/2 inch cubes, and place around the roast in the pan along with medium-sized cauliflower florets.

Mix together applesauce, beer, honey and salsa. season with salt/pepper/garlic powder to taste. It should still be pretty thick. Glaze the top of the roast with the sauce mix, and pour any remaining over the veggies in the pan. Bake uncovered for approximately 1 hour until roast internal temp gets to 160. Cook egg noodles in the interim. Slice roast and serve with veggies and pan juices over buttered egg noodles.
